Veggie Spring Roll
 
 
 
 
Spring roll wrappers
4 cups shredded cabbage
2 medium carrots (grated)
4 oz. bamboo shoot strips (approx. 1/2 cup)
1/4 cup minced green onion
1 tsp. sesame seed oil
1 Tbsp. shoyu
1/4 tsp. salt
1 tsp. hoisin sauce
 
1. Combine all ingredients in a microwave safe bowl. Mix thoroughly.
 
2. Heat in microwave oven for 2 minutes.
 
3. Drain any liquid , from vegetable mixture.
 
4. Portion on to spring roll wrapper, roll , fold over ends, roll and seal with
     water. Be gentle, do not break wrapper.
 
5. Heat a skillet with enough oil just to fry bottom half of spring roll.
     No need to deep fry.
 
6. Fry till golden brown. Place on paper towel to drain excess oil.
 
7. Eat with shoyu or other dipping sauce.
