Veggie Spring Roll Spring roll wrappers4 cups shredded cabbage2 medium carrots (grated)4 oz. bamboo shoot strips (approx. 1/2 cup)1/4 cup minced green onion1 tsp. sesame seed oil1 Tbsp. shoyu1/4 tsp. salt1 tsp. hoisin sauce 1. Combine all ingredients in a microwave safe bowl. Mix thoroughly. 2. Heat in microwave oven for 2 minutes. 3. Drain any liquid , from vegetable mixture. 4. Portion on to spring roll wrapper, roll , fold over ends, roll and seal with water. Be gentle, do not break wrapper. 5. Heat a skillet with enough oil just to fry bottom half of spring roll. No need to deep fry. 6. Fry till golden brown. Place on paper towel to drain excess oil. 7. Eat with shoyu or other dipping sauce.
