Penne Pasta with Sauted Garlic Veggies

(low sodium)

 

 

 

 2 cups uncooked penne pasta

 1/4 red (purple) onion, sliced

 1 cup chopped broccoli

 1 can stewed undrained diced tomatoes  (low sodium perferred)

 2 cloves minced garlic

 4 fresh mushrooms (halved)

 1 Tbsp. olive oil for pasta

 2 Tbsp. olive oil for sauted vegetables

 1 tsp. Italian herbs

 grated parmesan cheese

 

 

1. Cook pasta according to directions. Drain, return to sauce pan,toss with

    Italian herbs and olive oil. Set aside.

2. In a large non-stick skillet, heat 2 Tbsp. olive oil.

3. Saute garlic for 15 seconds.

4. Add broccoli and onions, sauté until tender. About 1 minute. Add   

    mushrooms.

5. Combine pasta with vegetables and mix, add diced tomatoes w/ liquid.

6. Continue to mix until all ingredients are well incorporated.

7. Top with grated parmesan cheese.

 

 

Note: This recipe can be adapted by adding your own favorite vegetables.
