Crispy Oven Fried Chicken
 
 
2 1/2 to 3 lbs chicken drumsticks or thighs
1 cup plain or seasoned bread crumbs
1 tsp. paprika
1 tsp garlic salt
1 tsp. Italian herb seasoning
1/2 tsp. pepper
 
1. Combine bread crumbs and seasonings together in a plastic bag or
    bowl.
2. Evenly coat each piece.
3. Place chicken pieces, skin side up, on a shallow baking pan.
4. Bake uncovered in a 375 degree oven for 40-50. Do not turn during
    baking.
 
 
 
Mashed Potatoes
5-7  Potatoes
Water to cover potatoes
1/2 cup milk, approx. ( Pour gradually into potatoes while mixing)
1 Tbsp. of margarine
Salt and Pepper to Taste
Garlic salt may also be used.
 
1. Fill a large stock sauce pan about half way with water and bring to boil.
2. Peel potatoes and place in a bowl of water so they will not turn brown.
3. Slice potatoes into 1/8 inch slices, and place in boiling water.
4. Cook potatoes until tender. Test by breaking one against side of pan.
5. Pour contents in to a colander. then place back into sauce pan.
6. Using an electric mixer, mash potatoes. While mixing add enough milk
    until consistency is smooth and thick.
7. Add margarine and salt, pepper to taste.
 

 
Bread Stuffing
1/4 lb. Bacon, minced                                                Seasoned Croutons 7 oz.
1 c. chopped celery                                                            1/3 c. chopped green onions
1/2 med. onion, diced                                                Salt and Pepper to taste
1 cup water or broth                                 
 
 1. Mince bacon, heat a large sauce pan and brown bacon.
 2. Add celery, onion and green onions, cook until translucent.
 3. Add water or broth and bring mixture to a boil.
 4. Lower heat and add croutons, stir until croutons absorb the liquid.
 5. Add more broth if necessary.
 6. Cover  sauce pan and turn heat off.
 
 
Pumpkin Squares
3/4 cup margarine                                                2 cups flour
2 cups sugar                                                            2 tsp. baking powder
1 can ( 16 oz. ) pumpkin                                    1/2 tsp. baking soda
4 eggs                                                                        1 tsp. cinnamon
1/2 tsp. salt                                                            1/4 tsp. nutmeg
                                                                                    1 cup chopped nuts (optional)
1. Cream margarine and sugar  until light and fluffy.
2. Blend in pumpkin and eggs.
3. Combine the dry ingredients and add to the creamed mixture.
4. Spread onto a greased and floured 15 1/2 X 10 1/2 inch
    jelly roll pan.
5. Bake at 350 F. for 40 minutes or until light brown.
6. Let cool before frosting.
