Biscuits
2 cups flour
1 Tbsp. baking powder
1 tsp. salt
1/4 cup shortening ( butter flavored shortening taste better)
3/4 cup milk
1. Preheat oven to 400 F.
2. Combine flour, baking powder and salt in a mixing bowl.
3. Using a pastry blender, cut in shortening until mixture is a coarse
texture.
4. Carefully stir in almost all of the milk, adding just enough to make
the dough soft and pliable. Too much milk makes the dough too
sticky to handle and too little milk makes the biscuits too
dry.
5. Round up dough onto lightly floured board or countertop.
6. Knead lightly 5 times. Too much kneading will form more gluten, which
will make the biscuit tough.
7. Roll dough about 1/2 inch thick.
8. Cut with a biscuit cutter.
9. Place on ungreased baking sheet.
10. Bake 10 to 12 minutes, or until tops are light brown. Yields 8-10
Biscuits, Sausage. Eggs and Rice Breakfast
1. Prepare biscuits first before starting on the other items.
2. Slice sausage into 1/4 inch round slices. Over low to medium heat, fry
sausage in a deep sided sauce pan. This wil reduce the amount of oil
splatter around stove top area. Place cooked sausage on a plate lined
with paper towels. Keep warm in oven.
3. Crack eggs in a medium size bowl and scamble with a fork. Add 1/8 to
1/4 cup milk to eggs and continue to mix, milk will produce a fluffier
scrambled egg. Over medium to medium high heat, melt 1 Tbsp.
margerine in a skillet and cook eggs.
