Banana Muffins
Ingredients:
3/4 cup sugar
1/2 cup margerine
2 ripe bananas
2 large eggs
1 1/4 cup A.P. flour
1 tsp. baking soda
1/2 tsp. salt
1/4 cup walnuts (optional)
Directions:
Preheat oven to 350 degrees.
1. Cream together margerine and sugar. Add smashed bananas and eggs. Blend
together using electric mixer.
2. Combine dry ingredients in another bowl and add to banana- egg mixture. Mix
with wooden spoon. Do not over mix.
3. Fill muffin cups 3/4ths full with batter.
4. Bake at 350 for 15-20 min. Yield: 12 muffins
